A beautiful and flavorful salad is always the perfect way to celebrate the arrival of fall. There is an Apple tree overhanging the property line into our yard at Hidden Bluff, and so everyday right now we see green apples dangling in our backyard. Our little town has lots of apples. On my morning jogs down to the river I pass a young apple tree which has several red apples hanging deliciously from its branches. The bright red fruit tucked in the soft, light green leaves is so wholesome and nostalgic to look at. Oddly, it comforts me to see this simple fruit that is age-old and has endured. Apples their long history embedded in our culture. Consequently, they have a universal appeal in many recipes both savory and sweet such as today’s Apple Bacon and Pecan Salad with Maple Dijon Dressing.
Crunchy sweet and savory items make the best salads. It is easy to come up with delicious salads by following the simple basic formula: greens, fruits, nuts, and cheese. Take what’s in season and experiment with pairings. Try new cheeses and fresh nuts. Throw in some extra veggies like beets, sweet potato, or pepper for variety. For this salad I decided to pull out mixed greens, pecans, gorgonzola, bacon, and apples slices. Next, I created a sweet and tangy dressing. My dressings also follow a simple formula of 3 parts oil, 1 part vinegar, some sweetener, a pinch of salt, and some herbs.
Apple Bacon and Pecan Salad with Maple Dijon Dressing
Ingredients
Salad
- mixed lettuce greens of choice
- Honeycrisp apple slices
- Gorgonzola or bleu cheese crumbles
- chopped pecans
- cooked bacon torn into pieces
Maple Dijon Dressing
- 1 tbsp. dijon mustard
- 3 tbsps. pure maple syrup
- 1/4 cup seasoned rice vinegar
- 3/4 cup olive oil
- 1/8 tsp. sea salt
- 1/2 tsp. dried thyme
Instructions
Assemble Salad
- Lay clean greens on plate.
- Layer on apples, pecans, crumbled cheese, and bacon.
- Serve with maple dijon dressing.
Make Maple Dijon Dressing
- Combine all ingredients except olive oil in a blender that has a top spout opening.
- Begin blending on high and slowly drizzle olive oil in dressing while blending. This will create an emulsified dressing that stays together.
- Serve dressing with salad. Store leftovers in fridge.
