Birthday Cake Pancake Mix (DIY Gift)
Today’s project might be my most favorite homemade diy gift yet. This year has been less than inspiring when it comes to shopping for gifts although we all knew it was coming. And no, gifts are not why we celebrate Christmas. Still, it was hard to see the meager selection and the often bare shelves. Consequently, the depressing situation made inspiration difficult for gift buying. Every year I put together themed family baskets for siblings, and this year my brain was not cooperating. So, I did what I always do when a creative dry spell hits: turned on the gas fireplace, make a cup of coffee or tea, grab my inspirational home magazines/books, my iPad for researching ideas, and I sit down browsing until my creative juices begin flowing again. And that was how today’s Birthday Cake Pancake Mix was born.
It was on my iPad that I was looking at gift baskets when an ad for chocolate pancake mix came up. Hmmmmmmm. The wheels started turning in my head as I went to the kitchen for the Bisquik and cocoa. Thankfully, the experiment worked. However, two things came to mind. Firstly, I needed to buy Krusteaz Pancake Mix for this project because it is just the best and fluffiest. And secondly, pancake mix with sprinkles was sounding even better. We live right by an Amazon warehouse, so an order was put in for 2 large bags of Krusteaz (remember, my husband’s large Cambodian family means quite a few gift baskets). Pancake mix, some extra sugar, vanilla powder, and sprinkles were combined and WOW! Yum! Yum! Now back to the store for cute jars. In the meantime, here is the recipe I created below.
Birthday Cake Pancake Mix
*Below is the basic amounts for both pancake mix and icing mix. Double, triple, quadruple as needed.
*Also, sprinkles can be altered to suit.
Pancake Mix
2 cups Krusteaz Pancake Mix
2 tbsps. of sugar
2 tsps. of vanilla powder (often available near the vanilla extract)
2 tbsps. of sprinkles
Combine all ingredients and store in a container in a cool, dry location. To make pancakes add 2/3 cup of water to each 1 cup of mix. Stir until just combined. After that, cook pancakes as usual over medium heat in greased pan.
Frosting Mix
2 cups powdered sugar
2 tsps. vanilla powder
1 tbsp. sprinkles
Combine ingredients and storage in plastic bag or container. To make frosting add 1 cup frosting mix to 2 tbsps. of melted butter and add enough milk or cream to make a pourable icing.
