Homemade Coconut Creme Eggs. March 22, 2023. Candy is a weakness of mine. All kinds of candy, but in particular chocolate candy- most anything chocolate. Years ago, Taste of Home magazine featured a homemade snickers bar candy that looked amazing. It was a lot of work, but I made it anyway and was glad I did because it was so darn good! Since then, I have loved making homemade candy. As Easter is coming up quickly my prep has started, and so today I made these homemade coconut creme eggs. These candies, however, are not as time consuming as the homemade snickers were. They are also perfect for the Easter table.
Homemade Coconut Creme Eggs
Makes approximately 3 dozen chocolate eggs
1 14 oz. bag of sweetened flaked coconut
1 cup of powdered sugar
One 14 oz. can of sweetened condensed milk
2 bags of semi sweet chocolate (or chocolate of your choice; I used dark chocolate here)
Plain almonds (optional)
To begin, combine coconut, powdered sugar, and sweetened condensed milk in a large bowl until fully mixed. After this go ahead and chill the dough for a couple of hours or overnight (chilling dough makes it easier to handle and less sticky). When ready take the dough from fridge and form eggs that are about 1.5 inches long and 1 inch wide. After eggs are formed melt chocolate according to pkgs. instructions and dip eggs in the chocolate, fully submersing. Use a fork to lift out and drain extra chocolate. Set egg on wax paper to harden. Store these in a plastic container until ready to use.
Tip: having wet hands makes it easier to form eggs out of this dough, and they will be smoother as well!
Form eggs.
As an option press one plain almond in the middle of each egg before dipping.
Dip in melted chocolate and let harden on wax paper.
Serve!
