No-Bake Pink Peppermint Fluff was the Christmas dessert we had every year while I was growing up. We loved it. Nothing says Christmas like big soft bites of this whipped, creamy, marshmallowy, pepperminty, fluffy dessert with its graham cracker crust. When I became a mom, Christmas cookies became a tradition in our household. However, a couple of years ago, I texted mom for the fluff recipe and decided to resurrect the tradition. Since then, it’s been served alongside the Christmas cookies. A couple of minor alterations were made to the recipe, but it is very much the pink peppermint fluff dessert of my youth. This dessert is so easy to make and is the thing you need for your holiday table this year!

No-Bake Pink Peppermint Fluff

Ingredients
- 2 cups heavy whipping cream
- 3 cups mini marshmallows
- 1 cup coarsely crushed candy cane (small chunks and pieces)
- 1/4 tsp. peppermint extract
- 1/2 cup powdered sugar
- 1 drop pink or red food coloring (optional)
- 1 tsp. gelatin dissolved in 1/4 cup of really hot water
- 1 1/2 cups finely crushed graham cracker crumbs
- 6 tbsps. melted butter
Instructions
- Start by combining the graham cracker crumbs and melted butter, then press the mixture into a 9-inch springform pan.
- Put the prepared crust into the refrigerator while you make the fluff.
- Dissolve the 1 tsp. of gelatin in 1/4 cup of hot water.
- Next, whip the 2 cups of heavy whipping cream, powdered sugar, and extract While the mixer is going, slowly drizzle the hot gelatin water into the fluff mixture until combined. Whip until soft peaks form.
- Gently folding in crushed candy cane, food coloring, and marshmallows.
- Spoon the pink fluff mixture into the springform pan on top of the crust and smooth out.
- Cover with plastic wrap and let the dessert set for a few hours or overnight.
- If desired, decorate with candy canes and extra marshmallows on top.
- To serve, Loosen around the edge carefully with a knife and remove the side of the pan.
- Store any leftovers in the refrigerator.
