No Bake Pink Peppermint Fluff Dessert

Pink Fluff dessert was the Christmas dessert ever year while I was growing up. We loved it. Nothing says Christmas like big soft bites of this whipped creamy, marshmallowy, pepperminty fluffy dessert with its cookie crust. When I became a mom Christmas cookies became the tradition in our household. A couple years ago I texted mom for the fluff recipe, and since then it’s been served alongside the Christmas cookies. A couple of minor alterations were made to the recipe, but it is very much the pink fluff dessert of my youth. No Bake Pink Peppermint Fluff Dessert is so easy to make and is the thing you need for your holiday table this year!

No Bake Pink Peppermint Fluff Dessert
Can be made ahead of time. Serves approximately 8-10 people.
The Fluff
2 cups of heavy whipping cream
3 cups of mini marshmallows
1 cupped of crushed candy cane
1/4 tsp. peppermint extract
1/2 cup of powdered sugar
1 drop of pink or red food coloring (optional)
1 tsp. gelatin dissolved in 2 tbsp. of really hot water (make this while cream is whipping)
Crust
1 11.2 oz. pkg. of Keebler sandies cookies finely crushed
1/4 cup melted butter
Start by combing the cookie crumbs and melted butter in a 9 in springform pan. Press crust firmly into pan and put in the refrigerator while you make the fluff. Next, whip the 2 cups of heavy whipping cream, powdered sugar, and extract until soft peaks start to form. While mixer is going, add the gelatin to hot water and slowly drizzle hot gelatin water in fluff mixture until combined. After gently fold in crushed candy cane, food coloring and marshmallows. Pour pink fluff mixture into springform pan on top of crust. Let the dessert set for a few hours or overnight. Loosen around the edge carefully with a knife and remove side of pan. Serve. Keep leftovers in the refrigerator.
