Old Time Ritz Carlton Lemon Poundcake Recipe
Today’s recipe takes us back to the 1920’s Ritz Carlton Hotel for an amazing Lemon Poundcake they were noted for. Vintage recipes are always fun especially because cooking was simpler back then. They used what they had and didn’t have access to zillions of specialized and exotic ingredients that we have today compliments of Amazon. Creativity often shines best at these simple moments, and this scrumptious lemon poundcake is out of this world amazing! It was so light and fluffy and lemony! This recipe well-deserves its popularity and is addicting for lemon lovers. Because of its fluffiness I think it could easily be turned into a traditional frosted round cake as well. In the meantime, I am making this for Easter! This cake is pretty darn easy and fool proof, so don’t be intimidated!
Ritz Carlton Lemon Poundcake Recipe
1 cup of butter (room temperature)
1/2 cup of shortening
3 cups of sugar
6 tbsps. fresh lemon juice
Zest from one lemon (I added extra zest- about 1 tbsp.)
3/4 tsp. salt
1 tbsp. baking powder
3 cups all purpose flour
1 cup of whole milk
5 eggs (room temperature)
Method
Cream together butter, shortening, and sugar until fluffy.
Next, add the eggs one at a time blending after each addition.
Add lemon juice and zest.
Turn off mixer and get your dry ingredients.
In a separate bowl combine flour, salt, and baking powder.
Add half of dry mixture to batter and mix.
After this add the whole milk to batter and mix again.
Lastly, add remaining dry mixture and blend well- mix well but be careful not to over mix.
Pour cake batter into 2 greased loaf pans and bake for at 350 degrees for about 55 minutes or until done.
Let cakes cool in pans for 15 minutes before removing.
Serve plain or add glaze or frosting as desired. See icing recipe below.
My Own Lemon Icing Recipe
2 heaping cups of powdered sugar
1 tbsp. of melted butter
3 tbsps. lemon juice
1 tbsp. of corn syrup (this helps keep the icing in place and nice)
Whisk ingredients together until smooth and pour over cooled cakes.
