Sparkling Lime Mint Punch
An easy, non-alcoholic, crisp, not-too-sweet punch for parties and holidays.
- 1- 12 oz. can frozen, but softened limeade concentrate (regular-sized can in freezer section)
- cold club soda (I use about 1 liter)
- lime slices
- 2-3 fresh mint springs
Make limeade per instructions replacing water with club soda.
Add limes slices and/or mint sprigs (optional). I don't go too heavy on lime slices or the punch gets too sour. Rub a few mint leaves to start releasing oils and put bruised mint leaves in punch.
Serve and enjoy!
-Best made right before serving. Store any leftovers in refrigerator and use within 1-2 days.
-Club soda works best for this. After trying sparkling water, seltzers, etc. I find that club soda is the fizziest and stays fizziest the longest. Many grocers carry an inexpensive generic brand of club soda in the soda section.
-For a large bowl of punch I use 4- 12 oz cans of frozen limeade concentrate and 4 quarts of club soda.
-Easily doubled, tripled, etc.
