1- 12 oz.canfrozen, but softened limeade concentrate (regular-sized can in freezer section)
cold club soda (I use about 1 liter)
lime slices
2-3fresh mint springs
Instructions
Make limeade per instructions, replacing water with club soda.
Add lime slices and/or mint sprigs (optional). I don't go too heavy on lime slices or the punch gets too sour. Rub a few mint leaves to start releasing oils, and put bruised mint leaves in the punch.
Serve and enjoy!
Notes
-Best made right before serving. Store any leftovers in the refrigerator and use within 1-2 days.-Club soda works best for this. After trying sparkling water, seltzers, etc. I find that club soda is the fizziest and stays fizziest the longest. Many grocers carry an inexpensive generic brand of club soda in the soda section.-For a large bowl of punch, I use 4- 12 oz cans of frozen limeade concentrate and 4 quarts of club soda.-Easily doubled, tripled, etc.Variations:Add sliced strawberries!Add smooshed blackberries
