Cinnamon Apple Bran Muffins

A classic favorite muffin for those chilly mornings!

Ingredients

  • 2 cups All Bran cereal Original; not flakes
  • 1 1/2 cups buttermilk
  • 2 eggs
  • 1/4 cup vegetable oil
  • 1 cup sugar (less sugar option use 3/4 cup sugar)
  • 1 1/2 cups whole wheat pastry flour
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1 cup chopped apple *adds a nice moistness to muffin!

Instructions

  • Begin by soaking the 2 cups of All Bran cereal in the 1 1/2 cups of buttermilk until soft (10-15 minutes).
  • Add to this the next 6 ingredients and stir until just combined.
  • Gently stir in apples.
  • In a lined muffin pan, divide batter between 9 cups or 12 small ones (about 2/3s full).
  • Bake the muffins at 400 degrees for 15-20 min.(small) or 20-25 min. (large).
