Leftover Thanksgiving Turkey Salad

Use that leftover turkey for this flavorful and delicious salad!

Ingredients
  

Leftover Thanksgiving Turkey Salad

  • Freshly washed and chopped mixed greens
  • Chopped cooked turkey
  • Dried cranberries
  • Fresh chopped pecans
  • Honey crisp apple slices (or apple of choice)
  • Cooked and crumbled bacon
  • Gorgonzola or bleu cheese crumbles
  • Maple Dijon Dressing (below)

Maple Dijon Dressing

  • 1/4 cup Rice vinegar
  • 3/4 cup Olive oil (vegetable oil fine too!)
  • 1 tbsp. Dijon mustard
  • 3 tbsps. Maple syrup
  • 1/8 tsp. Sea salt
  • 1/2 tsp. Dried thyme

Instructions
 

Leftover Thanksgiving Turkey Salad

  • Start by laying mixed greens on plate. Next add apple slices. Top this with desired amount of gorgonzola, bacon, dried cranberries and pecans.
  • Finish by drizzling maple dijon dressing on top.

Maple Dijon Dressing (makes approximately 1 1/4 cups)

  • Combine ingredients in a blend and mix till emulsified.
  • Serve on salad as desired.
  • Store in the fridge and use as needed.
