Leftover Thanksgiving Turkey Salad
Use that leftover turkey for this flavorful and delicious salad!
Leftover Thanksgiving Turkey Salad
- Freshly washed and chopped mixed greens
- Chopped cooked turkey
- Dried cranberries
- Fresh chopped pecans
- Honey crisp apple slices (or apple of choice)
- Cooked and crumbled bacon
- Gorgonzola or bleu cheese crumbles
- Maple Dijon Dressing (below)
Maple Dijon Dressing
- 1/4 cup Rice vinegar
- 3/4 cup Olive oil (vegetable oil fine too!)
- 1 tbsp. Dijon mustard
- 3 tbsps. Maple syrup
- 1/8 tsp. Sea salt
- 1/2 tsp. Dried thyme
Leftover Thanksgiving Turkey Salad
Start by laying mixed greens on plate. Next add apple slices. Top this with desired amount of gorgonzola, bacon, dried cranberries and pecans.
Finish by drizzling maple dijon dressing on top.
Maple Dijon Dressing (makes approximately 1 1/4 cups)
Combine ingredients in a blend and mix till emulsified.
Serve on salad as desired.
Store in the fridge and use as needed.
