Ingredients

  • 3/4 to 1 cup water *If you want a bit thicker syrup, use the 3/4 cup of water.
  • 1 cup sugar
  • 1 large panicle of clean lilacs

Instructions

Lilac Syrup (heat method)

  • Remove the lilac blossoms from the panicle and put into a small pot.
  • Add sugar and water to lilacs.
  • Gently heat mixture over medium-low heat just until sugar is dissolved. Don't boil or stew lilacs. It tends to kill the light floral flavor.
  • Remove from heat right away and strain into desired container.
  • Store in fridge.
  • Best used within a few days.

Lilac Syrup (no heat method)

  • Combine the lilacs, sugar, and water in a jar and seal with a lid.
  • Shake well.
  • Let the jar sit for a few hours, shaking it every now and again.
  • When the sugar is completely dissolved, strain the lilac panicles and pour the syrup into a jar.
  • Store in the fridge.
  • Best used within a few days.
