Asian Mango Chicken Salad with Ginger Sesame Dressing
Spring is here and so is lettuce growing season! Our growing season is about a month behind schedule up here, so I am eagerly anticipating our own lettuce in a few more weeks. In the meantime, store-bought lettuce will adequately do. And while it is a little more costly, the living butter lettuce is a good purchase for us because the lettuce stays “growing and alive” for a bit as opposed to wilting in 2-3 days. And it is butter lettuce that is being used for today’s highly flavorful Asian Mango Chicken Salad with Ginger Sesame Dressing. However, you can use any lettuce you like.
This salad is full of yummy flavors such as sweet mango and savory, grilled chicken which all pair excellently in this salad while crisp red pepper gives the salad a nice zing. Fried chow mein noodles and sliced almonds offer a fun crunch and Asian flair. This salad is bursting with flavor especially with the Ginger Sesame Dressing! Asian Mango Chicken Salad with Ginger Sesame Dressing
Asian Mango Chicken Salad
Grilled chicken slices
Lettuce
Avocado (sliced or chopped)
Chopped, sweet mango
Mandarin orange slices
Sliced almonds
Fried chow mein noodles
Chopped red pepper
Minced green onion
Ginger Sesame Dressing (recipe below)
Place clean lettuce on plate and arrange. Add slices of 1 grilled chicken breast. In the center placed a few cubes of avocado, orange slices, and mango. Sprinkle chopped red pepper, green onion, chow mein noodles, and sliced almonds on top. Drizzle Ginger Sesame Dressing.
Tip: try replacing chicken with BBQ pork slices.
Ginger sesame Dressing
Yields approximately 1 scant cup
1/4 cup of sesame oil
1/2 cup vegetable oil
1/4 cup seasoned rice vinegar
1 1/2 tbsps. sugar
1 tbsp. soy sauce
1/4 tsp. Chinese 5 spice
1 tsp. ginger paste or minced ginger
1 pinch of red pepper
Combine all dressing ingredients in blender and blend well. Use as needed. Store in the refrigerator.
