Bacon and White Cheddar Scones

The first day of Summer is just around the corner which means July 4th isn’t far behind. We love the Summer months in Oregon, and the weather is just perfect. This is the time of year that we are most thankful for the rain because of how green, lush, and beautiful it stays during the summer months. One of the things I also like about Summer is shedding the bulky winter clothes and wearing light, breathable summer dresses. Personally, a light sundress feels cooler to me than a pair of shorts and is easier to move around in. And since there is plenty going on in the summer moving around easily is important.

Currently, we are preparing for our annual BBQ and using a coastal theme for the event. This includes a coastal-themed menu. Since it seems attendance grows every year keeping the menu simple is important because it helps our day to run smoothly. Seafood and steak are both simple and flavorful, so our menu features our favorite marinated shrimp as well as our favorite grilled tri tip steak as the main course. To accompany these there is a salad bar and clam chowder among other things. And of course, if soup and salad are on the menu then there needs to be bread, so I got creative. Consequently, today’s post is a recipe for a bacon and white cheddar scone I created that goes perfectly with clam chowder.

A Scone or Biscuit?

Scone and biscuit recipes are very similar with the big difference being liquid used. Both have the usual flour, salt, and sugar base; however, I decided to mix things up and use a combination of whipping cream and buttermilk for a fluffy, biscuit-like scone. Additionally, I added cornmeal, so it has a slightly coarse crumb that is reminiscent of cornbread. The result is a rustic-type biscuit/scone hybrid that pairs well with chowder. And to top it off crumbled bacon and grated white cheddar are added on top making these so yummy! Feel free to substitute regular cheddar for the white cheddar if desired. Bacon and White Cheddar Scones

These scones are easy to make; however, make sure not to over handle or knead the dough, so it stays fluffy.

1 tsp organic cane sugar

2 cups organic white flour

1 tsp kosher salt

1/2 cup cornmeal

1 tbsp of baking powder

1 cube of butter

3/4 cup whipping cream

1/2 cup buttermilk

5 pieces fried bacon

1 cup grated white cheddar

Optional garnish: fresh snipped chives

Method:

Start by frying up the bacon and crumbling it when cooled. Grate about 1 cup of white cheddar. After this, combine the first five ingredients in a mixing bowl. Next, cut in the cube of butter until well-mixed and has coarse crumbs. Stir in the whipping cream and buttermilk at one. Take the dough and put it on a floured surface and knead a few times. The dough will be a bit sticky, so dust surface/hands with flour if needed. Pat dough into a rectangle about 1 – 1 1/4 inches thick and cut into 12 squares. Place squares on a parchment lined baking sheet and then top scones with crumbled bacon and grated white cheddar. Press the bacon and cheddar lightly into scones. Bake at 350 degrees for 20-25 minutes, or until scones are fluffy and light brown. For presentation, I like to toss some fresh snipped chives on top.
