Chocolate Chip Picnic Cake
Chocolate chips just make everything better in my world. Those tiny morsels of rich chocolate polka dotting cookies and desserts are always a welcome treat. Chocolate chips are a form of comfort food when you think of the popularity of the classic chocolate chip cookie. Do you ever find yourself whipping up a batch of chocolate chip cookies to make yourself feel better? Yep! Consequently, chocolate chips have found their way into thousands of desserts such as a chocolate chip cake my mom made for my birthday years ago. Eventually, I grew up and had kids I learned how to make one myself which is today’s recipe for my delicious and simple, moist chocolate chip picnic cake. Since we are on the eve of the Summer season with BBQ’s and al fresco dinners to come this easy cake is perfect to show up with. It is so yummy!

Chocolate Chip Picnic Cake
chocolate chip Cake
2 1/2 cups of flour
1 2/3 cups of sugar
3/4 cup of butter (softened)
3/4 tsp. salt
1 tbsp. baking powder
6 egg whites
1 cup of whole milk
2 tsps. vanilla extract
2 tsps. almond extract
1 cup of mini chocolate chips
Start by heating over to 350 degrees. While the oven is heating whip butter and sugar together in a stand mixture until well combined. Add egg whites one at a time beating well after each addition. Next, add vanilla and almond extracts as well as salt. Combine baking powder and flour in another bowl. Alternately add flour mixture and milk to batter, scraping sides of bowl after each addition. Stir in 1 cup of mini chocolate chips. After this pour batter into greased 13 x 9 inch pan and bake for 45-50 minutes or until cake is set in the middle. Let cake cool and make frosting.
CHOCOLATE CHIP frosting
1 lb powdered sugar
1 cup butter at room temperature
1/4 cup of cream
2/3 cup of mini chocolate chips
2 tsps. almond extract
2 tsps. vanilla extract
Whip butter in the stand mixture until fluffy and then add powdered sugar, extracts, and enough cream to bring the frosting together. Whip the mixture. If mixture is too thick, add a bit more cream (a tbsp. at a time). Add chocolate chips. Frost the cooled cake with icing. Enjoy!
