Strawberry Feta Salad

My favorite recipes are the most versatile ones such as today’s, Strawberry Feta Salad with Sunny Lemon Vinaigrette. Perhaps you’re familiar with the Festive Holiday Salad recipe I wrote over the Christmas season? If not, you can read about it here. The salad dressing recipe used in the Festive Holiday Salad is simple and easily adapted to create today’s recipe. Since we have been getting some shots of warm sun lately, I was inspired to bring out the lemon for the dressing. I can’t think of a fruit that says sunshine more than lemon. As I write I am saying a prayer that some rogue snowstorm won’t show up! Anyway, the lemon was a perfect partner with the dressing. Additionally, I have created a fresh, new salad with strawberries, feta, almonds, and grapes to pair with this dressing. It is a salad that says, “Spring is here!”

Lemon Vinaigrette

This salad dressing has a bright, lemony tanginess that is fresh and perfect for today’s Strawberry Feta Salad or any salad year-round. It is the perfect salad for Easter or Mother’s Day brunch with its light and pretty deliciousness, and you will be proud to serve it! The fresh lemon really shines through here; however, the honey also makes it extra special. Rather than sugar, I used honey as the sweetener. At this point, I have pretty much sworn off sugar in salad dressings because raw honey does a much better job of holding the dressing together for longer without having to shake it with every use. Plus, the dressing is thicker, and it just all together tastes better. Keep reading for the recipe.

Strawberry Feta Salad with Sunny Lemon Vinaigrette Recipe:

Sunny Lemon Vinaigrette:

Makes approximately one cup of dressing. Can be doubled, tripled, etc.

3/4 cup vegetable oil

1/4 cup fresh lemon juice

1 tbsp. white vinegar

3 tbsps. raw honey

1/2 tsp. sea salt

1 tsp. poppy seeds

Combine all ingredients in a blender. Blend well. Dressing should be thick, creamy, and white. Pour on salad when ready to serve. The dressing stays emulsified for a while, but shake as needed to recombine. Eventually, the dressing turns from white to opaque. Store in the fridge.

Strawberry and Feta Salad:

A variety of new lettuces chopped

Sliced almonds

Sliced strawberries

Feta cheese crumbled

Halved green grapes

Sunny lemon vinaigrette (recipe above)

Combine lettuce, almonds, grapes, strawberries, and feta in a salad bowl. Toss with the desired amount of dressing. Serve.

Tip: Make this salad a meal with cooked chicken breast.
