Our Family’s Magic Cookie Bars

 Magic Cookie Bars

Magic cookie bars have been around forever and there is a reason for that. It is because they are so good! This is another cookie recipe I only make at Christmas because of self-control issues. And while the original Magic Cookie Bar recipe is yummy I have taken the liberty of adapting it over the years for our Christmas cookie platter.

Magic Cookie Bars

How is this version different? The bars in our version are fatter with a couple extra ingredients. First, I doubled most of the ingredients to create a more substantial bar. A bit of sugar is also added to the graham cracker crust to sweeten it up a bit. But the best part is that butterscotch chips are added. The butterscotch chips take this recipe up a notch.

These are a beefed up version of the original we are all so familiar with. Butterscotch chips are added and everything else is doubled. These are always requested at Christmas!

Ingredients

  • 3 cups graham cracker crumbs *option for thinner crust at the bottom in notes
  • 1/4 cup sugar
  • 1 cup melted butter
  • 1.5 cups chocolate chips
  • 1.5 cups butterscotch chips
  • 3.5 cups sweetened, flaked coconut
  • 2 14 oz cans of sweetened condensed milk

Instructions

  • Melt the butter.
  • Combine graham cracker crumbs and sugar in large bowl.
  • Stir melted butter into graham cracker crumbs.
  • Press mixture very firmly into a 13 x 9 inch pan that has been lined with foil and greased.
  • Evenly pour 1 can of sweetened condensed milk on top of prepared crust.
  • Evenly spread the coconut on top of the milk layer.
  • Sprinkle chocolate chips and butterscotch chips on top of this.
  • Pour remaining can of sweetened condensed milk over the chips.
  • Press down firmly on magic bars.
  • Bake at 350 degrees for 35-40 minutes or until the crust is browning around the edges.
  • See tips below for cutting.

Notes

  • These bars are rather messy with graham cracker crumbs, melted chocolate, condensed milk, etc., so I recommend waiting until the bars cooled completely down to cut.
  • These freeze well.
  • I usually get 40 bars from this, but it will depend upon the size you cut. I cut 5 rows by 8 rows in my pan for 40 total.
  • Don’t want a thick crust? Try 2 cups graham cracker crumbs, 3/4 cup melted butter and 3 tbsps. sugar.

    1. Hi Kate. Unfortunately, there isn’t another option for the coconut. It is essential to this recipe. Best, Anna
