Upgraded Magic Cookie Bars
Magic cookie bars have been around forever and that is because they are so good! This is another cookie recipe I only make at Christmas because of self-control issues- lol! And while the original Magic Cookie Bar recipe is yummy I have taken the liberty of upgrading it over the years. How is this version different? My Upgraded Magic Cookie Bars are fatter and yummier and have a couple extra ingredients. There’s nothing wrong with that is there? When I bake, I like to make bakery versions of things and wimpy skinny cookies don’t cut it for me. In my humble opinion, Christmas cookies should be thick, fat, and fattening. Therefore, most of the cookies come from recipes I have altered.
Upgraded Magic Cookie Bars only have a few differences from the original recipe. First, I mostly doubled the ingredient amounts to create a fatter bar. A bit of sugar is also added to the graham cracker crust to sweeten it up a bit. But the best part is that butterscotch chips are added- yum yum! The butterscotch chips really jazz this recipe up in an awesome way. These changes result in a new version of the old that I call Upgraded Magic Cookie Bars. Make this and you will have no leftovers!
These cookies are quick, easy, and freeze well. Additionally, kids will like helping make these, and older kids can probably make these by themselves. And for additional, super yummy Christmas cookies recipes read here, here, and here! Happy holiday baking!
Upgraded Magic Cookie Bars
Crust:
3 cups of graham cracker crumbs (most of one standard-sized box of graham crackers)
1/4 cup of sugar
1 cup of melted butter
Topping:
2 cans of sweetened condensed milk
3 1/2 cups of sweetened flaked coconut
1 1/2 cups of butter scotch chips
1 1/2 cups of chocolate chips
Heat oven to 350 degrees. Prepare 13 x 9 in. pan by lining it with foil and spraying with pam (this will help tremendously with removal). Next, combine graham cracker crumbs, sugar, and melted butter with a fork until well-combined. Press this mixture into prepared pan. On top of this pour 1 can of sweetened condensed milk evenly over the crust. Put coconut on top of this and press lightly to adhere to milk. Sprinkle butterscotch and chocolate chips over the coconut. And Lastly, pour the second can of sweetened condensed milk evenly over chips. Bake for 30 minutes or until brown around the edges.
