One of the best wedding presents I received almost 32 years ago was a Better Homes & Garden Cookbook. It served this young new housewife well especially with her extremely limited cooking experience. The recipes were easy, simple to make and good. And while I don’t have the original cookbook anymore (because I wore it out) I still refer back to it as well as other versions using the online library. An even older version from 1982 has this delicious Blondie recipe that I added white chocolate chunks to for a warm, comforting bar cookie that is the perfect cozy Fall treat.

A Blondie is a white version of brownie. It is also very similar to chocolate chip cookie batter except with more brown sugar to give it that butterscotch taste. Some blondies use a mix of sugars, but this one uses all brown sugar and lots of it for a chewy, dense bar that is chock full of walnuts and white chocolate chunks and is delicious!

These bars are really really good slightly underbaked and served warm with ice cream! Even better is to bake these in a skillet and just scoop right from the pan to make sundaes and then add this homemade butterscotch sauce recipe right here.
White Chocolate Walnut Bars

Ingredients
- 1/2 cup melted butter
- 2 cups brown sugar
- 2 eggs
- 1 tsp vanilla
- 2 cups flour
- 2 tsps. baking powder
- 1/4 tsp. salt
- 6 oz chopped white chocolate
- 1 cup chopped walnut
Instructions
- Combine the melted butter, brown sugar and vanilla.

- Mix in the eggs.

- In a separate bowl mix flour, salt, and baking powder.

- Add the flour mixture to butter mixture and stir until combined.

- Stir in walnuts

- and white chocolate.

- Spoon mixture into a greased 13 x 9 inch pan

- or a well-buttered 12 inch skillet.

- Bake at 350 degrees for 20-25 minutes. Slightly underbaked is really delicious!

- If baking in a skillet it may need 5 or so extra minutes.

- Let cool and cut into bars.
