Whole Grain Biscuit Mix that’s Actually Good

Many people are prioritizing cleaned-up eating and are avoiding ultra-processed foods. This movement is in response to the increasing health crisis in our world. Countries around the world are feeling the effects of an overly-processed diet. We have greatly underestimated the role of food in our body’s health and its impact. Homemade and healthy has always been the priority in our house although we didn’t stick to it religiously. Now we know that ultra-processed foods are far more harmful than we realized. These days, we are focusing on cleaning up our eating. However, cooking everything is challenging when you’ve had a full day, so conveniences are still nice. To make things easier I came up with a cleaned-up biscuit mix that is helpful for the days I need to cut corners a bit.

One of the challenges of clean cooking is cutting way back on the white flour. A moment of transparency: I still use white flour on occasion because sometimes you want a batch of chocolate chip cookies or chocolate cake. However, coming up with whole grain recipes that are meal rotation-worthy is my new goal. This recipe was originally tried with whole wheat pastry flour which gives the finished product a very tender and fine crumb taste, but the whole wheat taste was very much there. This is fine, but I wanted something milder. Enter white whole wheat.

What is white wheat?

White whole wheat is a variation of whole wheat. All the goodness of the grain is there- it’s just a milder variety. This was what I needed for the biscuit mix. There is a bit of wheat taste, but mild and not overpowering. Even better, it’s not ultra-processed or bleached with extra ingredients added. White wheat is a good, mild option for transitioning to whole grains, especially if your family isn’t big into whole wheat.

This mix is made up easily and stores well in the freezer. It uses real, minimally-processed ingredients such as white wheat flour, organic butter, organic cane sugar, etc. King Arthur brand of white wheat flour contains no additives and has one ingredient: white wheat. They make high quality flours which I have been buying for years. Here is the recipe:

Recipe for Whole Grain Biscuit Mix that’s Actually Good

6 cups white wheat flour (I used King Arthur Flour brand)

3 tbsp. of organic cane sugar

1 cup organic, grass-fed butter (cut into cubes)

2 tsp. of sea salt

2 tbsp. organic baking powder

Combine all ingredients in a food processor until mixture is crumbs and butter is combined. Store in fridge or freezer. Mix is easily doubled.

Use as you would biscuit mix for pancakes, biscuits, and more.
