Combine vinegar, honey, and salt in a blender or food processor.
Next, turn on the blender/food processor and keep it going while slowly drizzling oil in through the lid opening. Don't pour the oil all at once.
Keep slowly drizzling oil in until fully combined and thickened- this step is important for a successful emulsification of dressing that doesn't separate.
