Today’s post is inspired by the chive blossoms that stand out in our garden with their pretty, pinkish-purple, pom-pom flowers. Since our garden is full of a large variety of herbs, I am always looking for new ways to use herbs in our food. Chives are extremely easy to grow and tend to multiply in the right conditions. Even up here in the foothills of the mountains, growing chives is easy. And while chives are common enough in food, it is the blossoms that are missing from our plates. Chive blossoms are absolutely edible and have a mild onion taste just like the chives. Did you know they make a delicious and beautiful purple-pink vinegar? This vinegar makes an amazing salad dressing with a light onion flavor that complements so many things. Keep reading to learn how to make it!

How to Make Chive Vinegar

Equipment
- 1 pint-sized jar with lid
Ingredients
- fresh chive blossoms (about a heaping cup)
- white or white wine vinegar (1- 1 1/2 cups, enough to fill jar after adding chive blossoms)
Instructions
- Fill your jar with fresh chive blossoms.

- Now fill the jar with white or white wine vinegar. Make sure to leave some headspace for shaking.
- Put the lid on the jar and shake.

- Let the jar sit for 3-4 days, shaking once or twice a day.
- Strain chive blossoms out and compost.
- The remaining vinegar is a gorgeous pink-purple that is delicious!
