Pumpkin Spice Bread

A sense of relief is flowing through me right now while sitting at my desk and writing. It is as if I am stopping by for a visit with an old friend. Much of summer was gobbled up with a wall renovation project, and many things including writing got dropped in the push to get this project done before fall. The house is finally put back together after the mess of renovation and I am back in my office. A hot cup of coffee and a slice of pumpkin bread accompany me while happily plunking away on the keyboard after a lengthy hiatus. September 1st is here to the joy of many women all around as we look forward to the colorful days ahead and pulling out chunky knit sweaters and reading good books. In keeping with the season, I have decided to share my latest creation in the kitchen today: Cake Mix Pumpkin Spice Bread.

Pumpkin Spice Bread

This yummy bread is incredibly moist! A box of cake mix turns pumpkin bread into an easy treat for the Autumn days ahead. I baked it in my Autumn-inspired Williams Sonoma loaf pan picked up on clearance last year. Does anyone else love end-of-season clearance sales? Decorative loaf pans have been a mixed bag of goods for me, especially with poundcakes. I have zero problems with a perfect release on this bread as long as non-stick cooking spray is used. This loaf is beautiful and delicious! Pumpkin always makes things so moist, but cake mix just took it up a few notches. There is room for alterations to the recipe as noted below. Today’s version is the one we enjoy, and I hope you enjoy it too!

Pumpkin Spice Bread

Cake Mix Pumpkin Spice Bread

*1 box yellow cake mix (I used Duncan Hines Super Moist)

1 15 oz can of pumpkin puree (not pumpkin pie mix)

2 eggs

**1/2 cup of sugar

**1/4 tsp. salt

**1/2 tsp. pumpkin pie spice

Optional: 1 cup of butterscotch chips

Recipe notes:

*Other cake flavors work great as well such as butter pecan, French vanilla, and spice.

**Optional ingredients or can be altered to suit taste.

Heat oven to 350 and spray 5 x 9 loaf pan and set aside. Combine all ingredients in bowl and stir until completely mixed. Pour cake mixture into prepared pan and bake for 55-60 minutes. Remove from oven and let sit for 10-15 minutes before removing from pan.
