Sunshine Herbal Tea

Snip. Another chamomile head falls into my basket and joins the others. Soon the plants are bare except for the tightly curled buds that refuse to fall prey to the herbalist’s guillotine basket just yet. It is early evening, and it is time to harvest the chamomile. Every couple of nights I head out around the corner of our house to collect more of these fairy-sized daisies. There is lots of chamomile this year, so there will be a good supply of chamomile tea for the winter. However, even though the plant is left bare of flowers after harvesting just two days later I will see a hundred more smiling white flowers. It reminds me a bit of the mythological 9-headed hydra monster. Every time one head was cut off two more grew in its place. However, unlike the hydra monster having lots of chamomile is a welcome thing here.

With the abundance of chamomile, I am working on creating my own herbal tea blends. Growing and making your own teas is a rewarding experience. It feels old fashioned and very cottage-y and refined all at the same time. If you haven’t tried it then I highly recommend it for a soul-satisfying hobby. The tea often tastes better as well given the freshness of the herbs not to mention quality of home-grown herbs. My current tea is a new blend I have created with some of my favorite flavored herbs. Sunshine Herbal Tea tastes like happiness in my mouth and is delightful to sip in the evening after dinner. The lemony and minty flavors complement the traditional chamomile and add happiness to this uplifting, yet soothing tea. The blend of herbs used follows and is quite simple. In fact, make extra to give as a special gift!

Sunshine Herbal Tea

Blend equal parts of the following dried herbs (learn how to dry your own herbs here):

Lemon verbena

Chamomile

Spearmint (or other mint)

Dried lemon peel (learn how to make this here)

Use one teaspoon per cup of hot water for tea and let infuse for a couple of minutes. Store tea blend in cool, dry place.
