Chive Blossom Garden Salad

Slowly, the garden vegetables are making their way to our plates. After a long, cold, and wet spring, it is a joy to have homegrown veggies to serve. And today, on the equinox, the PNW has emerged from the gray and is starting a long sunny, warm spell. The warm, golden rays will do much to pick up the garden. I have always loved vegetables- always. And growing them myself makes them taste that much better. Right now, our chive blossoms are blooming, so this week I have a new Chive Blossom Garden Salad to share. This salad is becoming my new favorite lunch! It is easy to make, flavorful, filling, and a good meatless lunch. And it has a lovely Blushing Chive Blossom Vinaigrette that is delicious. This salad can also be served as an elegant side dish for an afternoon party.

These ornamental herbs have a lovely, light, and pleasing onion flavor that complements so many other foods. We love fresh chives on our eggs (like these creamy eggs), baked potatoes, and so much more. And if you need other reasons to grow these lavender balls, did you know that chives are not only pretty and easy to grow, but they are also helpful in the garden for deterring unwanted pests and drawing in our bee friends? Lots more people are gardening these days, so garden-beneficial plants such as this one are great to include! Now, on to the salad recipe!

Chive Blossom Garden Salad

Ingredients
- 1/2 cup frozen peas, thawed
- 1/2 cup bite-size cucumber chunks
- 1 tbsp. sliced almonds
- 2 heaping tbsps. feta cheese
- Clean, fresh chive blossoms for garnish
- Blushing Chive Blossom Vinaigrette (recipe here)
Instructions
- Combine peas, cucumbers, feta, and almonds.
- Toss with Blushing Chive Blossom Vinaigrette.
- Garnish with fresh chive blossoms.
