Cool Cucumber & Honey Dew Refresher

One thing that is growing incredibly annoying over the last few years is food waste. It feels like an epidemic that grows worse all the time with no end in sight. But even as I write this, we are royally guilty of it around here. We are stepping up our efforts to reduce this significantly. Consequently, this means better planning and creativity with our food which is also a challenge with busy schedules. I’ll be the first to admit that convenience is often the deciding factor when planning. However, the new goal around here is to be more creative with leftovers which resulted in the inspiration for today’s post.

Maybe this is the case for you as well, but we often toss leftover veggies and fruit that have gone bad. This was bugging me a lot, so I am trying to be more careful in planning to avoid this. However, it still often happens that we have leftovers going bad anyway whether from a party or an unintended surplus. This is where the creativity part comes in. An idea surfaced one day to blend the extra cucumbers and leftover honeydew from that party to make this refreshing cocktail. It turned out to be a big yum! The drink got a big thumbs up from my husband for this cocktail with its fresh ingredients! It is the perfect cocktail for warm weather! So, here is it for you. And hopefully, it will help you to rethink fresh produce leftovers before tossing them.

Not only is this recipe a breeze to make, but you can freeze the base to save for another day. So, if you find yourself with a surplus of cucumbers or leftover honeydew from a party don’t toss it. Instead, pull this recipe out, and make a batch of this Cool Cucumber & Honey Dew Refresher.

Cool Cucumber & Honey Dew Refresher

1 cup washed & chopped cucumber (peel on)

1 cup chopped honey dew melon

Juice from half a lemon

1/4 Organic cane sugar

Sprigs of mint

Club Soda

Rum

Begin by pureeing the cucumber, honey dew, lemon juice, and cane sugar. At this point you can use it, freeze it, or refrigerate it (keeps about a week). This base keeps well in the freezer- just thaw when ready to use.

To use add 1/3 cup of base to 2 tbsps. of rum and some bruised mint. Add ice and pour about half a can of club soda into this mix and serve. This drink is also good with a lime wedge. Remember, there is no right or wrong way to do this. If you want your base sweeter then add more sugar, if you want more rum then add more rum, etc. Next, find a nice place to sit and enjoy!
