Several days later, the Christmas spirit is still flowing through Hidden Bluff. We aren’t ready to let it go yet. Everyday my husband and I sit by the lighted tree with the fireplace going and just enjoy the holiday ambiance. This is atypical for me as I am usually in a bustle to strip down every remnant of Christmas the very next day. Not this year. This year my body has been so busy hosting travelers, dinners, parties, etc. and working two businesses that I wanted to just enjoy the peaceful echoes of the holidays in the aftermath of the bustle. Rest of mind and gratitude are my companions right now. There was so much to accomplish this last year, and the Lord carried us through. Now the winter season of quiet reverie begins in earnest with evenings by the fireside and gazing aimlessly at its flames.

It was in one of these quiet moments that I revisited an idea that had come to me while putting together gift bags. After making this peppermint mocha latte mix for gifts I thought a white hot cocoa mix with crushed candy cane sounded yummy. So perfect for a winter’s day! But the cocoa turned pretty pink and the whole thing made me think of clouds. Of course, this inspired the name for this delicious hot drink. So, while I dream away of Spring and gardens and flowers, I can sip this heavenly pink peppermint cloud cocoa- my favorite color with a delicious taste.

Pink Peppermint Cloud Cocoa

Pink Peppermint Cloud Cocoa

1/2 cup of Ghiradelli’s white chocolate powder mix (I found this in a grocery outlet store)

1/2 cup powdered milk

1/2 cup of powdered cream

1/2 cup of crushed candy cane

Combine all ingredients together and store in air-tight container. To use, add 3 tbsps. (or desired amount) to 8 ounces of hot water and serve.
