Veggies have always been a favorite of mine- even when I was a kid. The only veggie I refuse to eat is celery. Celery and I never hit it off and never will, but everyone has to have their one vegetable enemy- right? Plenty of people I know hate Brussel sprouts with a passion; however, I love them with equal passion- lol! In any case, getting plenty of different colored veggies into our daily diets is very important for all of us. Veggies provide loads of vitamins, minerals, fiber, etc. and other undiscovered benefits. Veggie sandwiches are an excellent way to get a good dose of nutrition in. The problem is many times the benefits are cancelled out by adding lots of unhealthy things. So, today’s post offers a ranch cream cheese and veggie sandwich (clean) that is delicious and healthy!

With September around the corner who doesn’t need some ideas to make their life easier? Well, today’s post lightens that load with a flavorful, easy, make-ahead veggie sandwich that is also clean. And if you are wondering what clean eating is: it means you avoid ultra-processed foods. For example, many breads in the store have 25+ ingredients listed on the back. Bread only requires about 5 ingredients to produce an amazing loaf. The extra ingredients companies use preserve the shelf life of the bread as well as the product stability. Some processing is fine such as baking the bread. Another example is canned tomatoes which are cooked at high heat and sealed in cans to extend their shelf life but are considered clean eating. But anything that adds a lot of different ingredients or harsh processes are not. Clean eating also focuses on homemade as much as possible.

An excuse to use one of my favorite kitchen gadgets: herb scissors!

The highlight of today’s flavorful sandwich is a yummy ranch cream cheese spread. In fact, I recommend using this spread on crackers or bagels or pita bread or veggie pizza. It does not require a package of ranch seasoning either. All you need is a few ingredients to make your own clean and healthy and much tastier version of ranch.

One of the things I really like about this sandwich is that I can cut off hunks and pack it for a lunch. One sandwich loaf would take care of a week’s worth of lunches! Another thing I like is that different veggies can be used. Think of all the different sandwiches you could make. Additionally, this makes an excellent lunch for a small party or office lunch. And it is such an easy sandwich to make! Keep reading for how to make it.

1 8 oz. package of good quality, organic cream cheese (room temperature)

1 full stalk of green onion (minced)

1/4 tsp. of sea salt (if desired, add a bit more)

1/2 tsp. of dried dill

1/2 tsp. of dried parsley

1 garlic clove (peeled and minced)

Combine all ingredients well and store in fridge until ready to use.

Sandwich:

Veggies of choice (there is no right or wrong here; lots of potential here)

Loaf of clean whole wheat bread (Note: white whole wheat flour work here as well)

Ranch cream cheese

Split loaf in half lengthwise and spread one side (or both) thickly with ranch cream cheese. Layer veggies of choice. Place top half of bread back on. Serve or wrap tightly in plastic wrap to serve later. Store in fridge. Slice off hunks of sandwich as desired.
