Sparkling Peach & Raspberry Winesicles
The flowers are daily wilting in thirstiness this week. We are wilting too. It is a hot July. Every night I go out to give the garden a good long drink of water, so the flowers will perk up for another day. Don’t we all like to be refreshed when it is roasting outside? As it were there was some leftover peach champagne from our barbecue on the fourth, so I turned it into these ridiculously easy sparkling peach & raspberry winesicles to enjoy on these extra hot nights. This is a fun recipe for a cooling treat!
And what is a winesicle you ask? Well, it is a popsicle made with wine. This is a great way to use leftover wine. It is fool proof and easy to adjust. Use whatever flavor you like. I’ve also done this with blueberry Moscato and wild Maine blueberries. There are so many fun flavored wines and fruits, so the options are endless! This it is also a great way to use leftover wines.
Sparkling Peach & Raspberry Winesicles
With added fruit I found that one cup of wine yielded about 4 popsicles.
Sweet peach wine, moscato, or champagne
Simple syrup (I use equal parts sugar and water and microwave until just dissolved.)
Raspberries
Popsicle mold and sticks
Per one cup of wine, I add 2 tbsps. of simple syrup; however, this is completely up to your tastes, so use less or more to suit yourself. Using a popsicle mold put some fruit in and then pour wine over. Set up mold according to instructions and freeze for several hours until solid. Enjoy your frozen treat on a hot summer night!
Note: I tried adding sliced peaches to the popsicles along with the raspberries but found it harder to eat.
