Our Coconut Lime Mojito
My husband and I have a signature drink: Our Coconut Lime Mojito. We love it! It is really crisp and refreshing and pairs extremely well with Asian food with its sweet coconut, sour lime, and fresh mint flavors. Also, we also like that it isn’t too sweet and heavy. It is an easy drink to make and a forgiving recipe. You can eyeball it rather than measure out ingredients if you want because the coconut lime mojito is hard to mess up. When we had the historic heat wave last weekend this was the go-to drink for us- so icy cold and good! You will love this cocktail. And as a side note, the cheap coconut rum works just as well in this drink, so you don’t need to break the bank. Just enjoy!
Our Coconut Lime Mojito
Makes one drink
2 oz. of coconut rum (about 1/4 cup)
2 tsps. fresh squeezed lime juice
6-7 fresh mint leaves, bruised to release essential oils (this is a great drink to use your garden mint in!)
2 tsps. of simple syrup
3 oz. of club soda
To make simple syrup:
To begin with combine 1/2 cup of water and 1/2 cup of sugar in microwaveable dish. Microwave until warmed and sugar dissolves when stirred. Do not boil. Keep in fridge until ready to use.
To make drink:
Combine first 4 ingredients in glass and muddle a bit. Secondly, add ice and top with 3 oz. of club soda. Finally, stir and garnish with mint if desired.
