I have got a yummy salad for your holidays today! This is another salad packed with flavor and color. It features one of my favorite salad ingredients: roasted beets. Roasted beets pair really well with goat cheese, so naturally, I included goat cheese. Additionally, I decided to roll the goat cheese in thyme I had dried over the summer. The salted caramel almonds were a new touch with the beets, but it all turned out delicious. And last, but not least, is the yummy dressing! This quick and easy salad dressing may be my new favorite! It starts with a pack of Good Seasons Italian dressing mix and ends up with a flavorful balsamic salad dressing that ties everything together wonderfully!

This balsamic dressing is easy to make and quite delicious! It uses a pack of Good Seasons Italian dressing.

Salted caramel almonds are yummy! So yummy you will want to use them on other things, too!

This is a beautiful salad to serve to your guests! Much of it can also be made ahead of time.

Ingredients
Balsamic Salad Dressing
- 1 envelope Good Seasons Italian Dressing Mix
- 1/4 cup balsamic vinegar
- 3 tbsps. water
- 1/2 cup olive oil
Salted Caramel Almonds
- 1/2 cup sliced almonds
- 3 tsps. brown sugar
- sea salt

- 2-3 beets, washed and tops trimmed to about 1/2 inch
- mixed greens
- small goat cheese log
- dried thyme
- salted caramel almonds (see recipes below)
- balsamic salad dressing (see recipes below)
Instructions
Balsamic Italian Dressing
- Combine the Italian dressing mix, balsamic vinegar, water, and oi, then shake until well-mixed.

- Store in refrigerator.
Salted Caramel Almonds
- Combine almonds and brown sugar in a sauté pan over medium-low heat.
- Stirring the almonds frequently, cook until the brown sugar melts and coats the almonds.
- Remove the almonds from the heat and transfer them to wax paper.
- Sprinkle with salt.
- When cool, break almonds apart as needed and use on salads.

Roasted Beet and Herbed Goat Cheese Salad with Salted Caramel Almonds
- Place scrubbed beets on a baking sheet, drizzle with olive oil, and generously season with kosher salt.

- Roast beets at 400 degrees until tender in the middle (use a knife to check). Roasting time may vary. Smaller beets will likely take under an hour. Bigger beets can go up to 2 hours.
- Remove beets from the oven and allow them to cool.
- Peel the skin off the beets and cut as desired.
- Roll goat cheese log in dried thyme and cut into slices for salad. I put one slice on each salad.
- Assemble the salad by placing the mixed greens on salad plates.
- Lay a few roasted beet slices on the greens.
- Next, add a few caramel almonds.
- Then a slice of the herbed goat cheese.
- And finally, drizzle the salad with the balsamic dressing.
- Serve.
