Last week, I was out with my electric hedge saw picking grapes. Not usually the tool of choice for picking grapes, but necessary for this situation. To backtrack, it was while picking berries a few weeks ago that I discovered we had grapes on the hillside at Hidden Bluff. While picking berries one day, I noticed the grapes tucked under the large grape leaves- lots of grapes and several kinds of them. Down below, our bluff had become an enormous quarter-acre tangle of berries and grape vines. In fact, the grapes were overtaking the blackberries and some trees. To pick anything down there meant wearing rubber boots and long sleeves and using an electric tool of some sort. Seeing those clusters of purple gems was a happy find for this gardener’s soul, and so a few clusters went back in my bowl to prove we did have them.

The big bowlful of grapes sat on our counter. What would be done with those grapes, I wondered? Preserves, of course. Homemade grape jam is amazing! But another idea surfaced to try, and it was a delicious one! I roasted the grapes with excellent results, and they paired perfectly with melty brie cheese. Our annual autumn charcuterie was coming up, and this lovely appetizer would make an elegant and delicious presentation at our party. Additionally, roasted grapes can be used on other things, such as cooked meats, etc., making them versatile for other sweet-and-savory food pairings. If your grapes are really sweet, they can also be roasted with just olive oil and a sprinkle of salt. They are sweet enough without the balsamic and honey. And now the recipe!

Gooey, melty brie cheese with sweet and tangy roasted grapes to complement!

Ingredients

  • 2 cups Sweet and fresh purple or red grapes Washed and dried
  • 1 tbsp. Olive oil
  • Sea salt
  • 1 tbsp. Balsamic vinegar
  • 1 tbsp. Honey
  • 1 Brie wheel
  • Baguette slices
  • Thyme Optional

Instructions

  • Start by placing sweet purple or red grapes on a sheet pan and drizzling with olive oil and a couple of dashes of sea salt.
  • Add a couple of splashes of balsamic and an equal amount of honey (you can eyeball this- not too much, though. You want a light glaze, not swimming grapes).
  • Stir the grapes to coat, then roast at 400 degrees for 10-15 minutes, or until the grapes are browning, the skins are popping, and the juices are becoming jammy.
  • Set grapes aside and heat the brie wheel according to the package directions. I scored the top of mine both ways, placed the brie in a cast-iron pan, and put it in the oven at 375 degrees until the middle was wobbly (this took 20-25 minutes for me).
  • When the brie is done, pour the roasted grapes and their juices over it and, if desired, garnish with thyme.
  • Serve with crostini.
  • Tip: to save time, I surrounded the brie round with slices of baguette, which toasted while the brie was heating!

Notes

Notes: I used homegrown grapes. These are smaller and sweeter. If your grapes are larger, they may need more roasting time.
