Blushing Chive Blossom Vinaigrette. June 20, 2022. If you’ve never grown chives before, I highly recommend it for several reasons. First, fresh chives are delicious on many things, such as baked potatoes and pasta. Another reason is that chives are very easy to grow and reasonably self-seed without becoming invasive like forget-me-nots or calendula. Bees love chive blossoms for gathering nectar and ensuring you have pollinators in your garden. And lastly, chives produce adorable purple-pink, thistle-like balls, which are very useful for making a chive-flavored vinegar.

When I first learned how to make chive vinegar, I thought it was the prettiest thing with its hot pink color. Of course, I needed to find ways to use the vinegar, the most obvious way being a vinaigrette. Vinaigrettes are easy and resource-efficient, and an excellent way to use fresh herbs. And if you like pretty foods, this vinaigrette is also quite pretty with its blush-pink color. Salad lovers will likely enjoy this pale pink vinaigrette for its sweet, tangy, mild onion flavor.

Ingredients

  • 1/4 cup chive vinegar *see link below on how to make
  • 1/2 cup olive oil
  • 2 tbsps. honey
  • 1/4 tsp. salt

Instructions

  • Combine vinegar, honey, and salt in a blender or food processor.
  • Next, turn on the blender/food processor and keep it going while slowly drizzling oil in through the lid opening. Don't pour the oil all at once.
  • Keep slowly drizzling oil in until fully combined and thickened- this step is important for a successful emulsification of dressing that doesn't separate.
  • Ready to use.
  • Store in the refrigerator.
